4 eggs
1 1/4 c. mayonnaise or salad dressing
1/4 c. cold water
2 tsp. cinnamon
2 c. finely shredded carrots
1/2 c. chopped nuts
Directions:
1 16 oz. tub vanilla frosting (or use the frosting recipe from Homemade Carrot Cake, the next recipe listed) In a large bowl, blend well at medium speed the cake mix, eggs, mayonnaise, water, and cinnamon. Stir in carrots and nuts. Pour the batter into a greased and floured 13×9 pan. Bake at 350 for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Cool and spread with frosting.
