1/3 cup sugar
1 egg, separated
1/4 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup all-purpose flour
1/2 teaspoon salt
3/4 cup chopped pistachio nuts
1/2 cup orange marmalade
Cream butter, beat in sugar, egg yolks, and extracts. Sift flour with salt and add to the butter mixture. Form into 36 small balls, using about 1/2 tablespoon of dough for each. Dip in slightly beaten egg white; then roll lightly in nuts. Put on buttered cookie sheets. With fingertip, make depression in center of each cookie. Bake in 300 degree oven for 25 minutes. While warm fill center with marmalade.
