2 tablespoons melted butter
1 cup sugar
2 tablespoons light brown sugar
1/2 cup lemon juice
grated rind of one lemon
3 eggs, separated
1 1/4 cup milk
1/4 cup flour
1/8 teaspoon salt
1/8 teaspoon ginger
Cream butter with both white sugar and brown sugar. Add lemon juice and lemon rind. Blend in egg yolks and add milk. Sift together flour, salt and ginger. Mix into butter mixture. Fold in stiffly beaten egg whites. Pour into greased casserole dish and set dish in a pan of hot water. Bake at 350 degrees for 40 to 45 minutes until top is light brown and knife comes out clean.
