2 2/3 cups white sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
2 teaspoons vanilla extract
2/3 cup chopped nuts (pecans and walnuts are quite good, too.)
Stir the sugar, corn syrup and water over low heat until sugar is dissolved. Cook without stirring to 260 degrees on a candy thermometer or a small amount of mixture dropped into very cold water forms a hard ball.
In a mixing bowl, beat the egg whites until they form stiff peaks. Continue beating the mixture while pouring the hot syrup in a thin stream into the egg whites. Add the vanilla. Beat until the mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Fold in nuts. (Try peanuts for a different taste. Drop mixture from tip of spoon onto waxed paper. Cool.
